The Holiday Bikini – How to Make It

We present a home-style interpretation of a drink found on our latest menu. It's a party-sized pre-mixed that's packed full of flavours of a holiday season, which makes it perfect for a celebration. Save the extra citrus syrup you can use for brunch beverages, desserts, or to mix more rounds of the drink.

The Bikini Cocktail

Makes enough for 10 guests

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Combine the listed components in a pot, bring to a gentle boil, agitating so the sugar melts. Then, take off the burner and leave to cool down fully. Transfer to a sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for about a month.

Preparing the Premix: Combine all the liquids in a sizeable container, let it rest for 60 minutes, then strain best through muslin, making it perfectly clear.

For serving: Pour 85ml from the premix into a cocktail shaker packed with ice, gently stirring carefully for a minute to cool it down. Pour into a cold coupe glass or similar, decorate with a few cranberries adding the final touch with a brief mist of mandarin oil over the top.
